Random Cooking Exploits

Over the last few weeks I have been cooking random meals and little treats. Some I remembered to take pics of, others not so much. Here are the random things I've mad:-

Eric loves white chocolate and peanut butter and I just happened to have candy melts of each! I also happened to have a reese's pb cup shaped candy mold. What happens when you put those together? Your own homemade white chocolate peanut butter cups!

This next pic of of an Indian Chickpea Salad with Ginger I found blog surfing here. It sounded like something I would enjoy so I picked up some fresh ginger, the rest of the goodies I needed and whipped it up in a few minutes. Man was it good! It was even better the next day after letting everything settle in the juices.

Next up is is some quick and easy breakfast egg cups. I had some pre-cooked turkey sausage that I needed to use up, cheddar cheese lying around in the fridge and fair amount of eggs that needed to be used pretty soon too. I mixed the three up, added salt and pepper and poured the mixture evenly into a greased muffin tin. I baked it in a 350 degree oven for about 10-15 mins (until it wasn't jiggly in the center anymore). It was super easy and makes a perfect breakfast. If you use turkey sausage, egg whites and a reduced fat cheddar cheese it is a really healthy meal too! Serve with a side of fruit salad like I did and you are ready to go!

Here is one of our delicious dinners- Maple Bourbon Glazed Pork Tenderloin, garlic mashed potatoes, homemade red wine vinaigrette dressing on romaine lettuce and freshly baked cheddar bay biscuits with a butter parsley glaze. It was a pretty tasty dinner if I do say so myself.
